Soft Oatmeal Cookies

Original Recipe Yield 2 dozen





Ingredients

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
Optional... nuts, chocolate chips, rasins or cranberries (add to liking)

Directions

1.In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.

2.Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.

3.Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
 
Want to turn these delicious cookies into ice cream sandwiches... YES? O.K.
 
Seriously it's simple! Use any desired ice cream flavor, I used Vanilla as requested by my dinner date.  There are actually several different methods to making these cold treats.  One would be to use a carton of ice cream and carefully cut the carton away from the frozen ice cream.  Then laying the ice cream on a clean surface, cut the desired size of the ice cream slice.. I would suggest around a half to one inch in thickness.  Then you can use a cookie cutter or trace your cookies to cut out the ice cream shape.  Optional... roll the edges of the sandwhich in sprinkles, mini chocolate chips, chapped nuts or coconut! YUM! Then make the sandwich, wrap in wax or parchment paper (you may need to secure wrapper with tape) and freeze until ready to enjoy!!
 
Another method if you are not wasteful or won't use the entire carton is to scoop the amount of ice cream you want for each sandwich and mash into a circular shape between wax or parchment paper keeping a consistent thickness. Then make the sandwich and if you want roll the edges of the sandwhich in sprinkles, mini chocolate chips, chapped nuts or coconut! YUM! Next wrap in wax or parchment paper (you may need to secure wrapper with tape) and freeze until ready to enjoy!
 
If you are making these for a party or want to add something extra to spice these tasty treats up, you can embellish with ribbon, bows, paper cut outs, etc. The option are limitless!!!
